I tried out the infamous Emily Blunt roasted potatoes recipe that’s all over TikTok and also crashed Ina Garten’s website, and decided I could make it better!

If you haven’t heard, these Emily Blunt roasted potatoes have food bloggers going crazy and are seriously viral on TikTok.  Every time I went on TikTok someone was showing me crispy roasted potatoes! 

A food blogger even touted that his crispy roasted potato video is one of the only videos that Kylie Jenner has liked! 

These are not ordinary roasted potatoes thought, this roasted potato recipe promises creamy insides with a super crunchy exterior.  And you all know how I love a good crunch.

After Emily Blunt shared her English roasted potato recipe, I started seeing it all over TikTok as “crispy roasted potatoes” and I had to try it for myself.  Now you might wonder is this recipe worth all the trouble and extra steps?? Is it really the best-roasted potato recipe EVER?

The answer is YES!!!  Though the TikTok crispy roasted potato recipe definitely delivers, it is unnecessarily complicated.  Some of the steps in Emily Blunt’s roasted potato recipe and the recipes I see for these roasted potatoes on TikTok are completely unnecessary.  How do I know?  I tried it her way and my adapted version, they came out the same!

What Makes Emily Blunt’s Roasted Potato Recipe the Best

The real key to these crispy roasted potatoes from TikTok and Emily is cooking the potatoes BEFORE roasting them.  This gives them a creamy interior with the crispiest outside!

My Roasted Potato Recipe Vs. Emily Blunt and TikTok

So the only real part of Emily Blunt’s roasted potato recipe that I kept was the cooking before roasting part!  

I simplified all the other steps to save you time!

First, Emily Blunt’s roasted potato recipe uses canola oil, I used olive oil for more flavor.

Next instead of laying all the potatoes all out in one layer to dry I simply let them dry in a colander.

Unlike the TikTok roasted potato recipes, I DID NOT heat up the oil and pan in the oven first!  This was completely unnecessary, you really just need to coat the potatoes in oil.

And lastly, I put the potatoes in cold water and brought it to a boil instead of boiling the water first.  I find this cooks the potatoes much more evenly (this is what I do for mashed potatoes too)

Like I said before, the real key is just cooking the potatoes before roasting them!

Adapted TikTok Roasted Potato Recipe Originally from Emily Blunt

So here’s the easier version of the roasted potatoes from Emily Blunt that you see all over TikTok, that’ll produce the best roasted potatoes you’ve ever had!

Ingredients

  • 4 Potatoes
  • 3 Tbs Salt
  • 3-4 Tbs Olive Oil
  • Enough Water to Cover Potatoes

Instructions

Preheat your oven to 450 degrees F.

Scrub your potatoes and remove all the eyes.  You can leave the skin on or peel it, either option works.  

Cut the potatoes into about ½ to 1-inch pieces.

Put them in a pot and add enough water to cover.  Next, add the salt.  You add the salt to the water to really give the potatoes flavor on the inside, just like when you cook pasta.

Cook the potatoes on medium-high to high heat with the lid on until boiling, which should take about 10 minutes.

Once the water is boiling, remove the lid and continue cooking until the potatoes are fork-tender.

Next, drain the potatoes in a colander and let dry out for about 15 minutes.

Then, dump the potatoes back into the pot, add your olive, and shake the potatoes around.

I know it sounds kind of weird but you want the exteriors to rough up a bit so it absorbs all the oil and basically forms a crust while cooking in the oven.

Spray your baking sheet with non-stick cooking spray.

Now spread the potatoes in one layer on a baking sheet.  Put it in the oven and bake for about 45 minutes to 1 hour, flipping the potatoes once about halfway through.

Garnish with parsley and sprinkle with salt and pepper if you’d like!

Note:  If you see carrots in these pictures, it’s because I thought this recipe would be great with all kinds of root vegetables and I was right!  I added carrots and sweet potatoes in addition to regular potatoes and it turned out amazing!

Notes

This is a great way to roast almost any root vegetables.  I added carrots and sweet potatoes and it turned out great!
